Curry Rice With Chicken Skewers

Chicken Skewers
2 lbs boneless chicken (thighs/breast), cut in chunks
4 tbsp olive oil
1 tbsp curry powder
1½/ tsp salt.
1 tsp black pepper
1 tsp turmeric
Rice
2 cups basmati rice, washed & drained
1 large onion, chopped or sliced
1 large carrot, grated
¼ cup oil
1½ tbsp curry powder
2 tsp salt
1 tsp black pepper
2 tsp turmeric
3½ cups water
Instruktioner
Cut chicken into chunks and mix with oil & spices. Let marinate.
In a 9x13" baking dish, add onion, carrot, rice, oil, spices & water. Mix well.
Skewer chicken (about 6 skewers, 7 pieces each).
Lay skewers across the pan so they rest on the edges, hanging above the rice.
Cover with parchment + foil (to prevent foil contact with food).
Bake at 400°F (200°C) for 30 minutes.
Remove cover and broil 10 minutes until chicken is golden.
Meanwhile, mix salad ingredients with lemon, olive oil, salt & pepper.
Serve the rice and skewers with salad & pita or flatbread.
One-pan, full of flavor, done in aboutan hour!
