Hot Honey Feta Chickpeas

Ingredienser

1 tin chickpeas, rinsed (reserve about 60ml of the liquid)

250g baby pomodorino tomatoes

2-3 handfuls spinach

½ block feta

3 tsp hot honey (delightful from @meimeigoods)

Instruktioner

Preheat the oven to 200°C (fan 180°C). Add the tomatoes to an oven dish, drizzle with a little olive oil and season well with a good pinch of salt and pepper. Bake for about 15 minutes or so until they start to soften and burst.

Remove the dish from the oven and use the back of a spoon to gently press and smash the tomatoes so they release their juices. Add the rinsed chickpeas along with the reserved 60ml of chickpea liquid and the spinach, stirring everything together so the spinach starts to wilt slightly. Crumble the feta on top, drizzle over the hot honey, and return the dish to the oven for another 15-20 minutes until the feta is soft and the chickpeas are warmed through.

Serve as it is, or scoop it up with warm flatbread and enjoy!! 🙂
