Sweet Potato Brownie
Makes 9 brownies

2 medium sweet potatoes (around 500g),peeled and chopped
2 eggs
120g ground almonds
60g cacao or cocoa powder (use more if you want it to be a darker chocolate flavour)
100ml pure maple syrup
2 tbsp almond butter
2 tbsp coconut oil
1 tsp vanilla extract
1 tsp baking powder
Pinch of salt
100g chopped dark chocolate

Preheat oven to 180°C and line a small square baking dish (around 8x8 inches) with baking paper and grease with coconut oil
Steam sweet potato for 15-20 minutes until soft.
Add sweet potato, eggs, ground almonds, cacao or cocoa powder, maple syrup, almond butter, coconut oil, baking powder and a pinch of salt to a food processor and blend until smooth.
Alternatively mash your sweet potato and then mix in the other ingredients
Stir in the chopped dark chocolate reserving some to top
Scoop batter into the baking tin and flatten then top with dark chocolate
Bake 20–25 minutes, or until set and a toothpick comes out mostly clean.
Let cool completely before cutting for the best fudgy texture.
I served mine with a dollop of Greek yogurt and a sprinkle of cocoa powder
