If You Have Leftover Red Onions to Use Up Try This Recipe! P

Ingredienser

1 medium red onion, thinly sliced

150ml apple cider vinegar or white wine vinegar

1 tsp honey

1 large pinch of salt 1/2-1 tsp

Boiling water (to top up the jar)

Optional extras: a few peppercorns, chilli flakes, garlic, or herbs

Instruktioner

Slice your red onion up thinly and add it to a jar.

Pour in around 150ml of apple cider vinegar or white wine vinegar, a tsp of honey and a large pinch salt.

Top the rest up with boiling water. Mix gently so everything combines!

I added peppercorns but you can also add chilli flakes, garlic or herbs!

Let it cool down for 1 hour and the onions will soften and then bright pink.

Put the lid on and place the fridge overnight the flavour gets better after a few hours!

It can be stored in the fridge for 1-2 weeks. The onions need to stay fully submerged in the vinegar. You can use it as a topping for avocado toast and to add to other recipes
