Homemade Biscoff-style (speculoos) Cookies

Ingredienser

½ cup butter, softened

⅔ cup coconut sugar

1 tsp vanilla extract

1½ tsp ground cinnamon

¾ tsp ground cardamom

½ tsp ground cloves

½ tsp ground nutmeg

2½ cups almond flour

½ tsp baking soda

¼ tsp salt

Instruktioner

Add all ingredients to a bowl and mix until a soft dough forms.

Shape into a ball, roll out between parchment paper, and cut into cookies (cookie cutter or ⅓ cup).

Place on a baking tray and bake at 175°C / 350°F for 15 minutes until lightly golden.

Let cool and enjoy as is, or use in desserts.

Perfect for layering in desserts, crumbling over cream, or enjoying with coffee.
