Slow Cooker Chicken Gnocchi Soup (Olive Garden Copycat)

Ingredienser

1 pound boneless skinless chicken breasts (approx. 3 chicken breasts)

2 cups matchstick carrots

1 cup diced onion

2 stalks celery (diced)

3 cloves garlic (minced)

3 ½ Tablespoons italian seasoning

4 cups chicken stock

1 pound potato gnocchi

2 cups heavy cream

2 cups fresh baby spinach

1 ½ cups shredded Parmesan cheese

salt and pepper (to taste)

Instruktioner

To the bottom of a 6 quart slow cooker, add the chicken, carrots, onion, celery, garlic, italian seasoning and chicken stock.

Cover and cook on HIGH for 4 hours or LOW for 6 hours.

30 minutes before you are ready to serve, remove the chicken from the slow cooker and shred with two forks and return to the slow cooker.

Add the gnocchi and heavy cream, replace the cover and cook an additional 30 minutes.

Right before serving, stir in the spinach and cheese until wilted and melted.

Taste and season with salt and pepper, if needed, and then ladle into bowls to serve.
