Creamy Burst Tomato and Burrata Mini Gnocchi

Ingredienser

1 package gnocchi

1 pint cherry tomatoes

2 tbsp tomato paste

2 cloves garlic, minced

1/2 cup heavy cream

1/2 cup grated parmesan cheese

Burrata cheese

Red pepper flakes

Fresh parsley

Olive oil

Instruktioner

In a large pan, heat olive oil over medium heat and add tomatoes and minced garlic.

Cook until tomatoes are jammy and they start to burst. Season with salt and pepper.

Meanwhile, cook gnocchi in salted water according to package instructions, reserving some water.

Add tomato paste to the pan and cook for a few minutes.

Stir in heavy cream and grated parmesan cheese.

Transfer cooked gnocchi and some pasta water into the sauce and stir until coated.

Add red pepper flakes, parsley or basil, and extra cheese if desired. Simmer until sauce is thickened and creamy.

Top with torn burrata cheese, extra parsley or basil, and a drizzle of olive oil. Serve and enjoy!
