Chickpea Peanut Butter Cookies — Good not just for a healthy high-protein cookie—good compared to a normal store-bought cookie! You can’t taste the chickpeas at all, it’s easy to make with only a few ingredients, and it makes for a tasty little sweet treat.

Full Recipe (Makes approx. 4 cookies)

Chickpeas (rinsed, drained, and patted dry) — 125g / 3/4 cup

Creamy peanut butter — 65g / 1/4 cup

Honey (or maple syrup) — 40g / 2 tbsp

Vanilla extract — 1/2 tsp

Baking powder — 1/4 tsp

Salt — 1 pinch (optional)

Dark chocolate chips — 30g / 2 tbsp

Instruktioner

Preheat oven to 175°C / 350°F and line a baking sheet with parchment paper.

Add the chickpeas, peanut butter, honey, vanilla extract, baking powder, and pinch of salt to a blender or food processor.

Blend until completely smooth, scraping down the sides as needed.

Fold in the dark chocolate chips.

Scoop the mixture into 4 equal portions onto the baking sheet and gently flatten the tops.

Bake for 10–12 minutes, or until the edges are golden and the tops are just set.

Let cool on the sheet for at least 10 minutes to firm up. Enjoy!
