Beef Stirfry Bowls

FIRECRACKER BEEF BOWLS
1 lb lean ground beef
1 small white onion, chopped
3 cloves garlic, minced
1 large red bell pepper, sliced
1 large head broccoli, cut into small pieces
1-2 tbsp sesame oil
Garlic powder & onion powder to taste
Salt & pepper to taste
3 tbsp sriracha
3 tbsp coconut aminos
2 tbsp rice vinegar
2 tbsp brown sugar
Green onions & sesame seeds to top
Rice of choice
Yum Yum sauce (I use Primal Kitchen)
Instruktioner
Combine bell pepper, broccoli, sesame oil, salt, pepper, garlic powder & onion powder in a bowl and toss until all veggies are evenly coated. Place in air fryer and cook for 12-15 minutes at 375F (tossing halfway through). You can also cook these in the oven!
While veggies are cooking, add garlic and onion to a pan with olive oil (or avocado oil) over medium heat. Sauté for 2-3 minutes or until onions have softened, then push onions & garlic to the edges of the pan and add the beef.
While beef is cooking, make the sauce by adding the sriracha, coconut aminos, rice vinegar, and honey to a bowl. Whisk together until combined. Once beef is done, add sauce (along with a little pinch of salt if needed) to the beef. Allow this mixture to simmer for another 3-5 minutes or until sauce is mostly absorbed.
Assemble meal prep bowls by adding rice, veggies, and beef to each bowl. Top with yum yum sauce, green onions & sesame seeds!
