SLOW COOKER THAI CHICKEN

Ingredienser

¾ cup hot salsa

¼ cup crunchy peanut butter

¾ cup coconut milk

3 TBS lime juice

1 TBS soy sauce

1 tsp white sugar

2 TBS ginger paste

1kg chicken thigh fillets, diced

Instruktioner

Combine the salsa, peanut butter, coconut milk, lime juice, soy sauce, sugar and ginger in a jug. Place chicken in the slow cooker and pour sauce ingredients over it.

Cook on low until sauce has thickened and chicken is tender…approximately 6 hours.

Serve with rice and garnish with coriander.
