100 g (1 cup) oat flour (made from blended rolled oats)
50 g (½ cup) almond flour
50 g (½ cup) almond meal
110 g (½ cup) extra-virgin olive oil (or any neutral oil)
2 large eggs
1 tsp baking soda
60 g (3 tbsp) maple syrup
40 g (2 tbsp) apple cider vinegar
1 apple (about 120 g), grated and lightly squeezed to remove excess juice
¼ tsp apple pie spice
¼ tsp ground allspice
¼ tsp ground nutmeg
1 tsp ground cinnamon
⅛ tsp ground clove
Topping:
120 g (1 cup) toasted pecans, crushed

Preheat the oven to 350°F (175°C). Grease a small loaf pan or mini cheesecake pan and line with parchment paper if desired.
Prepare the oat flour by blending rolled oats in a food processor or blender until finely ground.
In a large bowl, whisk together the eggs, olive oil, maple syrup, and apple cider vinegar until smooth and emulsified.
Fold in the grated apples, mixing gently until evenly distributed throughout the batter.
Add the dry ingredients, oat flour, almond flour, almond meal, baking soda, and all the spices to the wet mixture. fold in until well combined.
Pour the batter into the prepared pan and smooth the top with a spatula.
Top with crushed toasted pecans, pressing them lightly into the surface.
Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Cool completely before slicing and serving.
