Healthy Tortilla Dip

Ingredienser

400g mixed beans, drained

75g cherry tomatoes, chopped

1/2 tin of sweetcorn, drained

1/2 red bell pepper, finely chopped

½ red onion, diced

1 chilli, finely chopped

Juice of 1 lime

1 handful chopped coriander (¼ cup chopped fresh cilantro)

2 tablespoons red wine vinegar

3 tablespoons extra-virgin olive oil I used a tin of beans so should that be 400g or is that wrong

Instruktioner

Drain and rinse the mixed beans and sweetcorn, then tip them into a large bowl.

Add the cherry tomatoes, red pepper, red onion, chilli, and coriander.

In a small jug, whisk together the lime juice, red wine vinegar, and olive oil.

Pour the dressing over the beans and veg, then stir well so everything’s coated.

Season to taste and give it 10 minutes to sit if you can, it lets the flavours come together.

Serve with tortilla crisps and watch it disappear.
