Clementine Cake

4 Clementines

6 eggs

225g granulated sugar

250g almond flour

1 teaspoon baking powder

Instruktioner

Place the clementines in a pot and cover them with water. Bring the water to a simmer. Cover and cook for 1 hour. Drain and allow the clementines to cool for 20minutes or until easy to handle.

Preheat the oven to 350F and line an 8-inch springform pan

Cut the clementines in half and remove any discard any pits.

Add all of the clementines (including skin) to the bowl of a food processor and puree until smooth. Add the eggs and mix thoroughly.

Add the sugar, baking powder and almond flour and mix on high until well combined, scraping down the sides as needed.

Pour the batter into the prepared pan.

Bake on the middle of the oven for 1 hour, until a toothpick inserted into the centre comes out clean . If the top seems to brown too quickly, cover with aluminum foil.

Remove from the oven and let cool completely.

Serves with whipped cream or plain Greek yogurt.
