Crispy Parmesan Chicken with Creamy Garlic Parm Sauce

Golden crunchy parmesan breaded chicken, meets the most addictive, creamy garlic parmesan sauce 😮💨 Paired with crispy potatoes for an absolute banging dinner

Ingredients (Serves 2):
500g maris piper potato cubed
2 tsp garlic granules
2 tsp italian herb seasoning
30g panko breadcrumbs
25g parmesan grated
2 x 120g chicken breasts flattened
½ small egg whisked
A few sprigs of fresh parsley chopped
For the sauce:
Tsp chopped garlic
50ml chicken stock
1 tsp italian herb seasoning
60ml single cream (can use Elmea 45% less fat or half fat creme fraiche)
Season the potato with a tsp of garlic granules and herb seasoning. Toss well to combine, before air frying at 190 degrees celsius for 25 minutes. Alternatively, bake in the oven at 200 degrees for 35-40 minutes.
Season the chicken with a tsp of garlic granules and herb seasoning.

Spray the breadcrumbs with olive oil, before adding half of the parmesan.
Dip each chicken breast into the egg, shaking off the excess, before dipping into the breadcrumbs. Shake the breasts to remove any loose breadcrumbs and re dip before pressing in well to adhere.
Air fry for 16-18 minutes at 190 degrees celsius until golden, turning part way through. Or bake for 20-22 minutes at 200 degrees celsius.
When there is a few minutes remaining add the chopped garlic to a small pan for a minute. Once toasted, pour in the stock and herbs and leave to reduce for a minute.
Once thickened, pour in the cream and add the remaining grated parmesan. Mix well and turn down to low.
Slice the crispy chicken into strips, before adding to a bowl with the potatoes.
Pour over the garlic cream sauce, before finishing with a touch of parsley.
