¼ pound tomatillos, husks removed
2 serrano chiles, stemmed, seeded, and chopped
1 jalapeño, stemmed, seeded, and chopped
½ pound of lean, thin-sliced bacon, finely chopped
1 pound of lean beef, such as sirloin tip or top round, sliced thinly and then chopped
4 garlic cloves, minced
3 to 4 cups beef broth
salt and freshly ground black pepper
2 cups cooked Rancho Gordo

½ cup cilantro, chopped
grilled whole green onions, minced chiles (serrano or jalapeño), quartered limes, and tortillas, for serving

Over high heat, bring a large pot of water to a boil. Add the tomatillos; boil until soft, 8 to 10 minutes. Drain the tomatillos, reserving the water. In a blender, puree the tomatillos with the chiles, adding enough of the reserved cooking water to make a smooth puree.
In a large, heavy pot over medium-low heat, slowly fry bacon until cooked through and fat is rendered. Using a slotted spoon, remove bacon from the pan; drain on paper. towels. Add the beef and garlic to the bacon fat; cook, stirring frequently, for about 2 minutes.
Raise the heat to high and add the tomatillo puree and 3 cups of broth. Bring to a boil, then reduce heat to medium-low; simmer for 20 minutes. Taste and adjust. seasoning with salt and pepper, and add an additiona cup of broth, if desired.
In a small saucepan over medium heat, warm the beans Divide warmed beans among wide individual bowis. Ladie the meat with its broth into the bowls; sprinkle with bacon and cilantro. Place green onions along the side of the bowl; pass chiles, limes, and tortillas at the table.

One of the highlights of any trip to Guadalajara should be the restaurant Karne Garibaldi, Their signature dish is Carne en su Jugo — one bite will make you a fan for life. It's somewhere between a soup and a stew. Accompanied by grilled onions, tortillas, and cilantro, it's a great dish that you don't see much on menus outside of Mexico. It's often served with boiled potatoes and refried beans on the side. / SERVES 4 TO 6
