Brothy Miso Garlic Chicken and Rice

Chicken Marinade
5-6 chicken thighs
2 tbsp white miso paste
3 cloves garlic minced
1 inch knob ginger, grated
2 tbsp honey
3 tbsp soy sauce
2 tbsp mirin
2 tbsp rice vinegar
Dash sesame oil
Salt
White pepper
Broth
2 boxes chicken broth
1 inch knob ginger, grated
2 garlic cloves, minced
1 white onion, sliced
Bunch of green onion, whites and greens chopped and separated
1 bunch baby bok choy, chopped
1 container shitaki mushrooms
1 spoonful chicken bouillon
1 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp miso paste
1 tbsp mirin
pinch of salt
Dash of white pepper
dash of garlic powder
Rice to serve!

Make the marinade: mix all marinade ingredients together. Season chicken with salt and pepper and add chicken to marinade. Let it chicken marinate for 30 minutes to 12 hours (I did about ~1 hour and it was great, but the longer the better).
Once chicken has finished marinating, add oil to a pot over medium heat, then add chicken, skin side down (if using skin on chicken) and sautee until it lifts off the pan or until golden/crispy, 5-7 minutes.
Flip chicken and cook for another 5 minutes. Remove and set aside (chicken should be about 2/3 cooked here).
Add white onions and white part of the green onion to pot. Sautee for about 5 minutes, until soft. Add garlic and ginger and sauttee for 1 minute, until aromatic. Add bok choy, and sautee for 5 minutes, until softened. Add salt, white pepper, garlic powder, chicken bouillon, miso paste, soy sauce, rice vinegar, and 2 boxes of chicken broth. Mix well until combined. Bring broth to a simmer on medium heat, add partially cooked chicken back, lower heat to a rolling simmer, and cook for another 15 minutes.
Serve over rice and top with green part of green onion, chili crisp, furikake, sesame seeds!
ALT: you could cook the rice in the broth to truly make this a one-pot meal, for more of a porridge consistency. To do this, after the step of adding the chicken back to the broth to cook, add 2 cups of rice, turn the pot to a low simmer, and cover uninterrupted for 18 minutes, until rice is cooked.
