FOR MARINATED FLANK STEAK
1½ Tbsp grated orange zest
1 Tbsp grated lime zest
2 Tbsp olive oil
1½ tsp cumin seeds
2 cloves garlic, finely chopped
1 1½ -to 2-lbs beef flank steak
Kosher salt and pepper
FOR ORANGE-SPIKED CHIMICHURRI
1 small orange
1 tsp grated lime zest plus
1 Tbsp fresh lime juice
2 Tbsp olive oil
½ large red chile, seeded and finely chopped
1 scallion, finely chopped
½ cup fresh cilantro, chopped
¼ cup fresh parsley, chopped

1. In resealable plastic bag, add citrus zests, olive oil, cumin seeds and garlic. Add steak, seal and turn to coat. Let sit at least 30 min. at room temperature or refrigerate up to 2 hrs.
2. Heat air fryer to 400°F. Remove steak from marinade, scraping off any large bits of citrus zest, cumin seeds or garlic. Season with ½ tsp each salt and pepper and add to air-fryer basket. Air-fry steak to desired doneness, about 8 to 10 min. for medium-rare (135°F), depending on thickness. Transfer to cutting board and let rest 10 min. before slicing.
3. Meanwhile, prepare chimichurri: Using vegetable peeler, remove 2 large strips of zest from orange. Finely chop and place in medium bowl. Squeeze in 2 Tbsp orange juice. Add lime zest and juice along with oil, chile, scallion and herbs and mix to combine. Serve steak drizzled with chimichurri.

We love this citrusy, herby sauce, but if you want to experiment with different marinades, use this temperature and timing with the flavor of your choice.
