140g All-purpose Flour
8g Baking Powder
1 Tbsp. Custard Powder
28g Tapioca Starch

2 Large Eggs
140g Sugar
140mL water
28g evaporated milk
1 tsp. vanilla extract
28g vegetable oil

In a medium bowl, sift together the flour, baking powder, custard powder, and tapioca starch. Set aside.
Set up a double boiler over medium heat. Add the eggs and sugar to the top bowl, whisking vigorously until the sugar is dissolved and the mixture has thickened slightly, about 5 minutes.
Add the water and evaporated milk to the egg mixture and stir to combine.
Slowly add the dry ingredients to egg mixture and mix until well combined.
Stir in the vanilla and vegetable oil. Pour the batter through a fine-mesh strainer into a clean bowl to catch any lumps.
Cover the bowl with plastic wrap and let the batter rest in the refrigerator for at least 1 hour, or overnight.
Transfer the batter to a spouted liquid measuring cup for easy pouring.
Heat up waffle iron mold for 2 ½- 3 mins on medium low.
Grease top and bottom waffle iron lightly with oil ensuring all egg bubble holes have been greased.
Pour batter into the waffle iron starting from the center to cover 75-80% of the waffle iron. Close the waffle iron and secure with the clamp. Let it cook for 2 ½ - 3 mins. You may need to adjust or lower the heat a little.
Flip the waffle iron and cook the other side for another 2 ½ - 3 mins.
Open and take a look, if you want it to be more brown flip again and continue to cook for 1-2 mins. Keep flipping and cooking both sides 1-2 mins until the desired level of golden brown is reached.
Use a fork to remove the waffle onto a rolling pin to cool and set the curve of the waffle. Allow the waffle to cool down and enjoy.
