Ingrediente

12 oz gemelli

2–3 chicken breasts

1 tbsp Cajun seasoning

Salt & pepper

1–2 tbsp oil

4 slices bacon, chopped

3 tbsp butter

3 tbsp flour

2 cups milk (or milk + a little half-and-half)

1 cup gruyère, shredded

½ cup cheddar, shredded

Extra Cajun seasoning (optional)

Instrucțiuni

1. Cook the pasta

Boil gemelli in salted water until al dente. Reserve a little pasta water.

2. Cook the Cajun chicken

Season chicken with Cajun seasoning + salt.

Sear in oil over medium-high heat for 4–6 minutes per side.

Let rest, then slice.

3. Make the bacon béchamel

Cook bacon until crispy. Leave 2–3 tbsp of bacon fat in the pan.

Add butter, melt.

Add flour, whisk 1–2 minutes.

Slowly add milk, whisking until thickened.

Reduce heat and stir in:

Gruyère

Cheddar

Season with salt, pepper, and a pinch of Cajun seasoning if you like.

4. Combine everything

Add pasta + bacon into the cheese sauce.

Stir until creamy (add pasta water if too thick).

Top each bowl with sliced Cajun chicken.
