Copycat McDonald's Chicken Nuggets

Ingredients: Makes 20-22 nuggets

1lb chicken breast, cut in chunks

1 cup Parmesan cheese, shredded

2 eggs

1 tsp salt

½ tsp pepper

½ tsp garlic powder

½ tsp onion powder

½ tsp paprika

Once your chicken breast is cut into chunks, add everything into a food processor. Process until everything comes together and there are no chunks of chicken left. You want this to be the consistency of a somewhat wet dough. If your mix is too dry, then your nuggets will be dry, so make sure the mix is well combined, but somewhat loose. Take scoops (about 2 Tosp) of the chicken mixture and place them onto a greased air fryer rack or basket. Gently press them into the shape of a nugget. It's easier to do it this way because the mix is sort of loose and soft and they are a little difficult to shape in your hand. Spritz the top of the nuggets with oil/cooking spray and then air fry at 400F for about 15-20 minutes. You want them to have an internal temperature of 165F. I like mine extra crispy, so I cook them on the longer end. If you have racks, swap your racks halfway through. (I also flipped mine and let them cook another minute or two so that the entire nuggets was crispy.) If you have a basket, flip them over halfway through.

You can freeze these. Cook them per instructions above. Once cooked, let them cool completely and then freeze them in a single layer on a cookie sheet. Once frozen you can place them into a freezer bag. To reheat in the air fryer, heat to 375F and cook for about 6-8 minutes or until heated through. To reheat in the oven, bake at 400F for 10-12 minutes or until heated through.

All air fryers are different, so make sure you watch these the first time you make them as you may need to adjust cooking and reheating times. You can use other cuts of chicken if you want. Feel free to use additional or other seasonings. I find that this is a good amount without overpowering the taste of the nuggets. Feel free to double, triple, quadruple the recipe.
