Protein Poppin’ Packed Peppers

6 bell peppers
1 tbsp. avocado oil
1 tbsp. garlic, minced
1 cup onions, minced
1 (20 oz.) 97/3 Ground turkey
1 ½ cups baby bell mushrooms
2 cups cauliflower rice (frozen)
1/2 cup Low-Fat Good Culture Cottage Cheese
1/3 cup parmesan cheese
1/3 cup Trader Joe’s Lite Mozzarella
6 slices lite mozarella
2 cups Rao’s Marinara Sauce
1/3 cup low sodium chicken stock
1/3 cup Frank’s Red Hot
My meat seasonings:
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. Trader Joe’s 21 Seasoning Salute
1 tsp. smoked paprika
1 tsp. basil
1 tsp. black pepper
1 tsp. oregano
2 tsp. parsley flakes
Instrucțiuni
Step 1: Pre-heat your oven to 400˚F. Cut off the top of your peppers and remove the seeds. Chop into bite-sized pieces and set aside.
Step 2: Heat a skillet to medium-high heat and add the avocado oil, onions, pepper tops, garlic and mushrooms.
Once tender, add your ground turkey and seasonings. When it’s cooked through, add 1 cup marinara, hot sauce (optional) and cauliflower rice. Cook until the rice is tender.
Step 3: Combine 1/2 cup cottage cheese, 1/3 cup parmesan and 1/3 cup lite mozzarella a bowl.
Step 4: Add some marinara and 1/3 cup chicken stock to the bottom of your backing dish. Fill each pepper with meat, cottage cheese mix and more meat, then add a tbsp of sauce to the top.
Step 5: Cover your dish with foil (or whatever you use) and bake for 30 mins. Then remove from the oven, add your lite cheese and bake for 15 minutes more.
Feel free to swap out the cauliflower rice for regular if it makes you happy.
Or remove the cheese or swap for plant based if it makes you happy.
