Duck Mappas

1 kg Duck cut into small pieces
1 tbsp Peppercorns
3 Cardamom
4 Cloves
1 inch Cinnamon
1 tsp Fennel Seeds
½ tsp Cumin Seeds
2 stem Curry Leaves
6 Green Chilly
1 ½ inch Ginger
15 Garlic Cloves
2 Onion big sized sliced thin
10 stem of Cilantro (else hand full)
½ tbsp Turmeric Powder
2 tbsp Coriander Powder
1 tbsp Pepper Powder
1 tsp Garam Masala
4 tbsp Coconut Oil
2 cup + 2 tbsp Warm Water
3 ½ Coconut Milk Powder
1 ½ tsp Salt
Instrucțiuni
Coarsely Grind together green chillies, peppercorns, cloves, cardamom, cinnamon, fennel seeds, cumin seeds, ginger and garlic.
Heat 3 tbsp coconut oil in a pan and add the ground masala.
When the raw smell goes, add onion and sauté until onion is soft.
Then add turmeric powder, coriander powder, garam masala and pepper powder.
Add 2 tbsp water and ground coriander leaves and sauté till oil appears around edges
Add duck and mix well.
When the duck starts to turn white in colour add salt and mix well.
Then in a bowl mix 1 ½ cup of warm water and 1 ½ tbsp coconut milk powder and add it to duck.
Mix the duck well and cook it for 1 hour in medium flame. Mix the curry every 15 minutes.
Meanwhile, in a bowl mix ½ cup of warm water and 2 tbsp coconut milk powder and add it to duck.
Mix it well and add curry leaves as well.
Remove curry from heat just before curry boils and then add rest of the coconut oil on the top and allow curry to rest.
Duck Mappas ready to serve.
Note
You may wash duck with 2 tbsp of vinegar.
It is also good to marinate duck with juice of 1 lime, ½ tsp turmeric powder, 1 tsp of salt overnight to make duck more softer.
