Chokladbollar (Swedish Chocolate Coffee Balls)

Ingrediente

100g unsalted butter at room temperature, OR 80g coconut oil melted

60g unrefined cane sugar (caster, or granulated bashed down in a pestle and mortar)

1 teaspoon vanilla extract

3 tablespoons hot coffee

4 tablespoons cocoa powder

120g rolled oats (choose gluten free if necessary)

Pinch salt

40g desiccated coconut

Instrucțiuni

Soften the butter with a spatula or back of a spoon, then mix in the sugar and vanilla extract till well incorporated. For coconut oil method see notes.

Mix the coffee with the cocoa powder into a paste, and then pour into the fat and sugar mix, stir well.

Finally tip in the oats and salt, and mix until the oats are all covered with chocolate.

If you want to make even balls, weigh the dough, then divide by 10 to find out how big each ball should be - they should be large golf balls not small truffles. I usually weigh the first one and then do the rest by eye. Roll the mix into a smooth ball in your hand and then drop into a plate of desiccated coconut, and move on to the next ball, don't roll around in the coconut until you have a done a few more balls, then WASH YOUR HANDS. Now you can roll the balls around in the dessicated coconut and smooth down in the palm of your hand. Place on a plate. and continue until all the mix is used up. Chill for around 30 mins, then eat.
