Loaded Sweet Potatos

Ingrediente

400g Beef Mince

2 Large Sweet Potatoes

1/2 Red Onion

3 Garlic Cloves

1 Green Pepper

150 Black Beans

4 Tbsp Tomato Paste

100g Light Mozzarella

1 Tbsp Taco Seasoning

2 Fresh Jalepenos

Few Sprigs of Coriander

Instrucțiuni

Oven: 200°C (400°F) for 45–60 minutes.

Air Fryer: 190°C (375°F) for 35–45 minutes.

Pierce the skin with a fork before cooking for even results.

While potatoes are cooking, saute onions then add beef, garlic, jalapenos, green pepper, taco seasoning, beans, and tomato paste. Cook until meat is browned.

Once potatoes are done, slice them lengthwise and top with beef mixture and cheese. Bake until cheese melted.
