Turkey Bacon Pesto Wrap

Ingredients

1 cup fresh basil

1 ½ cups fresh baby spinach

½ cup olive oil

½ tsp kosher salt

Juice of 1 lemon (or yuzu for extra kick)

Pinch of pepper

½ cup pine nuts

2 large tortilla wraps

4 pieces of cheese

4 tbsp pesto sauce (from the above recipe)

4 strips cooked bacon (chopped)

2 cups cooked turkey (roughly chopped)

1 cup lettuce

½ of tomatoes (sliced)

2 tbsp mayonnaise

1 avocado (sliced)

Directions

Instructions for Pesto

Add all of the pesto ingredients to a food processor.

Blend until smooth. Set aside.

Instructions for Wrap

Spread mayonnaise evenly on each tortilla wrap.

Layer sliced avocado, lettuce, tomato, cooked turkey, and chopped bacon on the wraps.

Spread 2 tbsp of pesto sauce on each wrap.

Add 2 pieces of cheese on each wrap.

Wrap the tortillas tightly.

If desired, use a panini press or griddle to gently melt the cheese and crisp up the wraps.
