Snatched Waist Chicken

2 ½ lbs chicken breast (thin-sliced)
1 red bell pepper, sliced
1 orange bell pepper, sliced
1 white onion, sliced
1 pack mushrooms, sliced
5 slices Trader Joe’s Part Skim Mozzarella Cheese
2 tbsp olive oil
Garlic, minced
Seasonings: salt, pepper, garlic powder, Italian seasoning
Directions
Preheat oven to 425°F
Season the chicken
Place chicken in a baking dish and season generously on both sides
no oil needed)
Bake
Cover and bake for 25 minutes
Cook the veggies
While the chicken cooks, sauté peppers, onion, and mushrooms in olive oil + garlic
Cook for about 5 minutes until slightly softened
Remove chicken from oven
Add veggies on top and in between the chicken
Add cheese
Use about ½ slice per piece of chicken
Broil on high for 5 minutes until cheese is melted and slightly golden
Serve + enjoy
