Ingredients

8 oz feta cheese (block)

24oz cherry tomatoes

16oz shelf stable gnocchi

1/4 red onion, thinly sliced

1 teaspoon Italian seasoning

2 tablespoons olive oil

Salt & black pepper, to taste

Chopped basil and parmesan cheese

Directions

Preheat your oven to 400 degrees.

In a 9×13 baking dish, place the feta in the center. Add the cherry tomatoes, gnocchi, and sliced red onion. Drizzle with olive oil and season with Italian seasoning, salt, and black pepper. Toss everything to coat.

Bake uncovered for 30 minutes, or until the tomatoes are bursting, the feta is soft, and the gnocchi is tender.

Use a fork to mash the feta and mix it with the roasted tomatoes to create a creamy sauce. Stir everything together until the gnocchi is well coated.

Sprinkle with fresh basil and parmesan cheese, and enjoy.
