Tri-Tip (Traeger)

1-2 1.5-2lb tri-tip steaks/roasts (prime grade preferred)
plan for 8oz/person for adults and 4oz for children
Holy cow seasoning
Montreal steak seasoning
Traeger pellets - Lumberjack competition blend
Directions
Preheat Traeger to 225.
Pat the tritip(s) dry and season generously with about 2/3 holy cow, 1/3 montreal steak seasoning.
Smoke at 225 for approximately 1 hour, then remove from heat and cover with foil.
Increase Traeger temperature to 550 (max) and wait for it to come to temp. Put the roasts back on the grill for 15min each side to sear.
Remove from heat, wrap tightly in foil and cover with a towel or insulating blanket. Let rest for 20 min, then slice thinly to serve.
