Peach and Tomato Caprese Salad

Ingredients

½ cup white balsamic vinegar

1 garlic clove, minced

3 tablespoons brown sugar

3 tablespoons extra-virgin olive oil

¼ teaspoon sea salt

2 fresh ripe peaches, cut into 1-inch pieces, or sliced

2 pounds tomatoes, preferably heirloom, cut into bite size pieces (remove seeds and juices if plentiful)

10-12 fresh basil leaves, whole or chopped

8 ounces fresh mozzarella sliced or cut into bite size pieces

flakey salt, for serving

freshly cracked black pepper, for serving

Directions

1. In a large bowl, whisk together the vinegar, garlic, brown sugar, olive oil and salt.

2. Add the peaches, tomatoes, basil and mozzarella to the bowl, toss to combine with the dressing.

3. Sprinkle with flakey salt & freshly ground pepper to taste.

Note: Alternatively you can slice the peaches, tomatoes and mozzarella. Arrange on a serving platter, tuck in whole basil leaves then drizzle with dressing.
