Ingredients (Serves 2–3):
4 large eggs
10 cherry tomatoes, chopped
5 oz fresh spinach (150 g)
3 ½ oz Greek feta (100 g), crumbled
10–15 Taggiasca olives, sliced
1 ¾ oz grated Parmesan cheese (50 g)
Chia seeds, to taste
Extra virgin olive oil, to taste
Salt and black pepper, to taste
Directions
Line the air fryer basket with parchment paper.
Add the raw spinach to the basket.
Crack in the eggs and gently mix directly in the basket.
Add the chopped cherry tomatoes, olives, and crumbled feta.
Finish with the grated Parmesan and chia seeds.
Drizzle lightly with olive oil and season with salt and black pepper.
Air fry at 375°F / 190°C for 15–20 minutes, until golden brown and fully set in the center.
Let cool slightly, slice, and enjoy!
