Warm Spinach Salad with Bacon Dressing

Ingredients

3 hard boiled Eggs

7 slices Thick Cut Bacon

4 tablespoons Reserved Bacon Grease (for dressing)

2 tablespoons Bacon Grease (for cooking)

1/2 small Red Onion Sliced Very Thin

1 package Sliced White Mushrooms

8oz Baby Spinach

3 tablespoons Red Wine Vinegar

3 tablespoons Sugar

1/2 teaspoon Dijon Mustard

1 dash Salt

Directions

1. Fry Bacon until crispy . Remove and place on a paper towel. Reserve 4 tablespoons of bacon grease. Set aside. Remove 2 additional tablespoons of grease and place into a separate skillet over medium heat and add onions. Cook slowly until onions are caramelized. Remove onions and set aside. In the same skillet add mushrooms and cook slowly until caramelized. Remove and set aside. Chop bacon and slice hard boiled eggs.

2. To prepare dressing add to a small saucepan, over medium low heat, add reserved bacon grease, vinegar, and sugar. Mix well and add mustard. Whisk mixture until warm and combined.

3. Add spinach to a large mixing bowl, place bacon, mushrooms, and onions (microwave till they are warm) on top and add warm dressing. Toss and place onto serving dish and garnish with sliced eggs.
