Summer Fruit Crumble

Ingredients

Fruit layer:

4 cups chopped fruit (berries can be left whole; chop stone fruit into bite-sized pieces)

1/4 cup white sugar

1 tbsp cornstarch (or flour)

Juice of 1/2 lemon

Topping:

1 egg

1/4 cup oil

1/3 cup brown sugar

1 tsp vanilla

1 cup flour

1/2 tsp cinnamon

1 tsp baking powder

1/2 tsp kosher salt

Directions

Preheat oven to 350°F.

In a bowl, toss fruit with white sugar, cornstarch, and lemon juice. Spread evenly in a pie plate.

In another bowl, whisk together egg, oil, brown sugar, and vanilla. Add flour, cinnamon, baking powder, and salt. Stir until combined.

Drop spoonfuls of topping over fruit, leaving some gaps so steam can escape.

Place the pie plate on a baking sheet to catch drips.

Bake for 50 to 60 minutes until fruit is bubbling and topping is golden.
