Preheat oven to 350 degrees F. Grease muffin tins with coconut oil.
Combine melted butter and sugar in a medium bowl. Whisk until smooth and fluffy.
Next, add in the eggs and whisk well.
Add in coconut milk and vanilla. Whisk until combined.
In a separate bowl combine baking powder, flour, and salt. Mix well.
In a large bowl add in your dry mixture into the butter mixture and whisk until smooth. You can also add it all to a bowl of a stand mixer and mix.
Fill the prepared muffin tin 3/4 full with batter. This is about 1/4 cup of batter per muffin cup.
Sprinkle coconut on top.
Bake for 35-40 minutes until golden brown. For a chewy center take out at 35 minutes.
Once done, let it cool in the pan for 10 minutes. Then remove from and place on a cooling wire rack to cool completely.
Sprinkle with more coconut for the perfect muffin and enjoy!
For the best results, be sure to use mochiko flour for this recipe.
