No-reheat Crunchy Thai Chicken Wraps

Ingredients

2 large tortillas or wraps

200 g (7 oz) cooked chicken breast, sliced

1 cup shredded cabbage or lettuce

1/2 cup shredded carrots

1/4 cup red bell pepper, thinly sliced

2 tbsp fresh cilantro, chopped

2 tbsp crunchy peanuts, chopped

Thai Peanut Dressing:

2 tbsp peanut butter

1 tbsp soy sauce

1 tbsp lime juice

1 tsp honey

1 tsp sesame oil

1–2 tsp water to thin, if needed

Directions

In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, and water until smooth.

Lay out tortillas and spread a little dressing in the center.

Layer chicken, cabbage, carrots, bell pepper, and cilantro on each wrap.

Sprinkle with chopped peanuts and drizzle extra dressing if desired.

Roll tightly and serve immediately—no reheating required!
