Mushroom and Spinach Creamy Gnocchi Pasta

Ingredients

You'll need:

1 tablespoon olive oil

1 tablespoon butter

16 oz mushrooms (baby Bella's recommended)

1 teaspoon salt and pepper

16 oz uncooked gnocchi

1 tablespoon olive oil

5 cloves garlic, minced

1/2 cup chicken or vegetable broth

1 cup heavy whipping cream

1/2 teaspoon oregano

1/2 teaspoon paprika

2 handfuls spinach

1/2-1 teaspoon chili flakes

Directions

Heat olive oil and butter in a pan, sauté mushrooms seasoned with salt and pepper until golden (approx. 5 minutes). Reserve half.

Add more olive oil if necessary. Sauté garlic with remaining mushrooms for 30 seconds on low-medium heat.

Stir in gnocchi, broth, cream, salt, oregano, and paprika. Mix well and cover.

Cook covered for 3 minutes over medium-low heat.

Uncover, add spinach, and mix. Combine ingredients for 1-2 minutes. Top with reserved mushrooms and sprinkle chili flakes. Serve while hot.

Pair with salad and warm crusty bread."
