Lemon Poppy seed Cookies

Ingredients

2 cups All Purpose Flour

1 teaspoon Baking Soda

1 1/2 teaspoons Freshly Gated Lemon Zest

1 teaspoon Ground Coriander

2 tablespoons Poppy Seeds

3/4 cup Salted Butter, Softened

1 cup White Sugar

2 large Egg Yokes

1 large Whole Egg

1 1/2 teaspoons Pure Lemon Extract

Directions

1. Preheat oven to 300 degrees

2. In a medium bowl combine flour, baking soda, lemon zest, coriander, and poppy seeds. Mix well with a wire whisk and set aside.

3.In a large bowl cream butter and sugar with an electric mixer at medium speed until mixture forms a grainy paste. Scrap down sides of bowl, then add yokes, egg, and lemon extract. Beat at medium speed until fully combined.

4. Add the flour mixture and mix at low speed just until combined. Do not over mix.

5. Drop by rounded tablespoons onto ungreased cookie sheet, 2 inches apart. Bake for 21 - 23 minutes until cookies are slightly brown along the edges. Immediately transfer cookies with a specula to a cooling rack.
