Homemade Caesar Salad Dressing (Cookie And Kate)

Ingredients

2 small garlic cloves, minced

1 teaspoon anchovy paste (see note)

2 tablespoons freshly squeezed lemon juice, from one lemon

1 teaspoon Dijon mustard (I like the brand Maille)

1 teaspoon Worcestershire sauce

1 cup mayonnaise, best quality such as Hellmann's Real

½ cup freshly grated Parmigiano-Reggiano

¼ teaspoon salt

¼ teaspoon freshly ground black pepper

Directions

In a medium bowl, whisk together the garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce. Add the mayonnaise, Parmigiano-Reggiano, salt and pepper and whisk until well combined. Taste and adjust to your liking. The dressing will keep well in the fridge for about a week.

Note: Anchovy paste can be found near the canned tuna in the supermarket.

Result: easy and yummy!

Recipe: changed original a bit. 1/4 cup mayonnaise, 1/4 cup fat free Greek yoghurt, 1 garlic clove grated, 3/4 cup grated paramo and hard dried cheese, 1 tbsp Worcestershire sauce, 1 tbsp fresh lemon juice, 1/2 tsp salt, 1 tsp black pepper, 1 tbsp milk (to thin)

Next time: Dial down garlic as it is a little raw, either grate and add to lemon juice first, or use 1/2 clove, or use garlic powder; the yoghurt makes it sour so it only needs a touch of lemon; Worcestershire sauce makes it salty so only add a dash.
