Sushi Or Ceviche
Salmon Tartare

400g skinless salmon fillet
4 tablespoons soy sauce
2 tablespoons of sesame oil
1 chili pepper
1 tablespoon wasabi paste
80g leeks only white and light green part
1/2 teaspoon chili flakes or Sriracha sauce optional
To serve:
2 avocado
salt and pepper
2 tablespoons of lemon juice
1 tablespoon of black sesame seeds
Directions
- Rinse the salmon fillet under cold water and pat dry thoroughly with paper towels. Cut into thin slices and then finely chop.
Cut the leek lengthwise into 8 strips, being careful not to cut through the root heel. Cut crosswise into small pieces. Finely chop the chili pepper.
Peel and dice the avocado. Sprinkle with lemon juice and mix.
Pour soy sauce into a bowl. Add wasabi paste and start whisking with a whisk. While stirring constantly, slowly pour in sesame oil. Whisk until emulsified.
Add chopped salmon, leek and chili to the sauce and mix well. If you like it hotter, you can add chili flakes.
Divide the tartare and avocado into 4 parts. First, place a portion of avocado on a plate, then the salmon tartare. Sprinkle with black sesame seeds. You can decorate each portion with a bit of chopped leek.
