Cowboy Butter Chicken Thighs

Ingredients

800g -1kg Chicken thighs, skin on, boneless

1 tsp each of the following - garlic granules, onion granules,paprika

Salt and black, to taste

Cowboy butter -

80g Butter

1/2 tbsp Garlic, minced

1 tbsp Lemon juice

1 Lemon, zested

1 tbsp Dijon mustard

1 tbsp Worcestershire sauce

1 tsp Onion granules

1 tsp Crushed chilli flakes (or to taste)

1/2 tsp Dried thyme

1 tbsp Smoked paprika

2 tbsp Fresh parsley, finely chopped

Directions

Step 1 - In a small bowl, add the garlic granules, onion granules, paprika, salt and black pepper. Mix to combine. Season both sides of the chicken and set aside.

Step 2 - In a small pan, on low heat, add the butter, once almost melted, add the garlic, Dijon mustard, Worcestershire sauce, zest and lemon juice. Mix to combine. Now add all of the dry seasonings, mix and then finally add the parsley. Remove from the heat and set aside.

Step 3 - In a large pan, on medium/heat. Add 1-2 tablespoons of the butter, swirl around the pan, then place in chicken thighs, skin side down. Once you get a good sear, flip over and pour on the remaining cowboy butter. Cover and cook for 20 minutes or until the chicken has cooked through.

Step 4 - Serve with your favourite sides! Enjoy.
