Kickass Baked Apples

Ingredients

APPLES

1 large honeycrisp apple

1 tsp honey

cinnamon

pinch of salt

1/2 cup water (for baking dish)

OAT MIXTURE

1/3 cup old-fashioned oats

2 tsp honey

1/2 tsp pure vanilla extract

1/2 tsp cinnamon

5 walnuts, finely chopped

pinch of salt

DATE CARAMEL

2 dates

small splash of water or milk

pinch of salt

TOPPING

1 scoop greek yogurt

Directions

Preheat oven to 375°F. Slice apple in half lengthwise, scoop out the core and some flesh to create a hollow center.

Sprinkle each half with honey, cinnamon, and salt. Place cut-side up in a dish set inside a larger pan with 1/2 inch of water. Bake for 30-35 minutes.

Mix oats, honey, vanilla, cinnamon, walnuts, and salt until sticky. Set aside.

Soak dates in hot water or warm milk for a few minutes, then mash with a fork and a pinch of salt until caramel-like.

Remove apples from oven, spoon oat mixture into the hollowed centers. Optional: bake another 10 minutes until golden.

Top with greek yogurt and date caramel. Enjoy.
