Baked Italian Chicken

Ingredients

120g piece Flat pancetta

250 g Cherry tomatoes

8 cloves Garlic

2 tbsp Oregano, leaves

1/2 cup Black olives

Black pepper, cracked

1 tbsp Olive oil

1 Basil leaves

finely grated parmesan

2 X 200g chicken breast fillets, trimmed

Directions

Preheat oven to 200 degrees. Place tomoat, pancetta, oregano, garlic and oil in a baking dish and toss to combine.

Add the chicken and olives to the diah an sprinkle with pepper.

Bake for 20min or until the chicken is tender.

Place on serving plates, top with basil and sprinkle with parmesan.
