Al Pastor Chicken Salad in a Tub

Al Pastor Chicken:
1 ½ lbs boneless skinless chicken thighs or breasts, chopped
¼ cup pineapple juice
2 tbsp white vinegar
2 tbsp chipotle in adobo sauce (plus 1 pepper, minced)
1 tbsp simply organic garlic powder
1 tsp simply organic smoked paprika
1 tsp simply organic ground cumin
1 tsp simply organic oregano
½ tsp simply organic ground cinnamon
Salt & pepper, to taste
Salad:
2-3 cups shredded lettuce
1/2 cup chopped pineapple
1/2 cup cucumber, chopped
½ red onion, thinly sliced or pickled
Fresh cilantro, chopped
High Protein Cilantro Jalapeño Dressing:
1/2 cup Plain Greek yogurt
1/2 cup cottage cheese
1 jalapeño (deseeded and deveined)
2 bunches cilantro
Squeeze of lime juice
Salt to taste
Optional: 1-2 tbsp honey
Directions
Marinate the chicken: Combine all marinade ingredients. Toss with chicken in a bowl or bag, marinate for at least 30 minutes (or overnight for deeper flavor).
Cook the chicken: Grill or pan-sear the chicken until fully cooked and slightly caramelized. Let rest, then chop into bite-sized pieces.
Prep the bowl ingredients: Chop lettuce, onion, cilantro, pineapple, and cucumber.
Assemble in the tub:
Add lettuce to the bottom.
Layer on red onion, cucumbers, pineapple, chicken, and cilantro jalapeño dressing
Drizzle with an extra squeeze of lime juice!
Top with more cilantro and onion!
Mix it all together and enjoy!
