450g chicken breast

200g basmati rice

32g Thai red curry paste

400ml light coconut cream

100g light mozzarella

400g corn kernels

200g cherry tomatoes

2 bunches broccolini

100g spinach

100g spring onions

Salt and pepper

Directions

Mix everything in a 9x13 pan

Bake at 350 for 45 minutes.
