1 Tbsp. vegetable oil
1 b. boneless beef chuck. finely chopped [Partially freeze beef to make it easier to chop.]
4 Tbsp. butter
1 cup diced onion
1/2 tsp. salt, plus more to taste
½ tsp. black pepper, plus more to taste
Pinch cayenne pepper, plus more to taste
⅓ cup flour
4 cups beef broth
1 (30-oz.) pkg. frozen french fries
1 cup fresh cheese curds
Sliced green onion, for garnish
Directions
1. Drizzle oil into a large saucepan and heat over high heat. Add beef. Cook, stirring occasionally, until juices evaporate and beef starts to brown, 5 to 7 minutes. Add butter and reduce heat to medium. Stir until butter is melted.
2. Add diced onion, salt, black pepper, and cayenne. Cook, stirring occasionally, until onion is softened, 2 to 3 minutes. Stir in flour. Cook, stirring constantly, until flour smells nutty, 2 to 3 minutes. Pour in broth and bring to a simmer over high heat, stirring constantly. Reduce heat to medium. Simmer uncovered, stirring and scraping bottom and sides of saucepan occasionally, until gravy thickens to desired consistency, 15 to 20 minutes. Season to taste with additional salt and cayenne.
3. Meanwhile, prepare fries according to package directions.
4. Top fries with cheese curds and gravy. Garnish with green onion and black pepper.
