Halloumi Chicken Rice

444 kcals per portion

42g PRO, 45g CHO, 13g FAT

300g of uncooked chicken breast, butterflied

150g of uncooked basmati rice

1 tbsp of olive oil

2 cloves of garlic, minced

1 onion, diced

2 peppers, diced

1 tsp each of paprika, cumin & 1/2 tsp of chilli powder

2 tbsp of nandos peri peri marinade sauce

300ml of reduced salt chicken stock

1 tbsp of tomato paste

1 tsp of sugar

50g of halloumi

30g of mozzarella

30g of Nandos Sweet Chilli Jam

15g of Nandos Garlic Perinaise

Parsley, for garnish

Directions

Marinate the chicken in 1 tbsp of the peri peri sauce. Add half of the oil to a pan and the chicken. Fry on either side for 5-8 mins. Remove.

Add oil to the pan with onion, garlic, paprika, chilli powder and cumin. Add peppers, rice, chicken stock, tomatoes paste, 1 tbsp of peri sauce, sugar, salt/pepper. Add back in the chicken.

Bring to a boil then simmer. Cover for 10 mins until all of the water has absorbed.

Turn off the heat, and shred the chicken. Mix in the mozzarella, cover and let sit.

Fry the halloumi until then sprinkle over the pan and drizzle over the perinaise and chilli jam. Garnish with parsley.
