2 tbsp butter
5 garlic cloves
1/2 yellow onion
3 tbsp tomato paste
1 cup cherry tomatoes
1 cup heavy cream
1/2 cup parmesan cheese or to taste
salt *to taste*
pasta:
12oz rigatoni pasta
1/4 cup pasta water
garnish with basil and parmesan
Directions
cook pasta in salted water until al dente
in a pan over medium heat, add onion, butter, and garlic. cook until softened (around 2 min)
add tomato paste and cook until lightly caramelized
add cream, then season with salt
add parmesan cheese, pasta water, and cooked pasta. mix well. garnish with basil and parm
take off heat and add in cold cherry tomatoes (cut in halves)
