Buttermilk Pancakes

Ingredients

3 cups flour

2 tbsp baking powder

1/2 tsp salt

2 tbsp sugar

2 large eggs

2 3/4 cups milk + 3 tbsp vinegar (homemade buttermilk!)

1/2 cup melted butter

1 tsp vanilla extract

Directions

Whisk dry ingredients in a bowl.

Whisk wet ingredients in a large measuring cup.

Combine wet and dry—don’t overmix! A few lumps are fine.

Cook on med-low heat with a little oil.

Flip when bubbles form on the surface.
