Chicken Kefta

Ingredients

1 lb ground chicken

1/2 white or yellow onion, shredded and drained

5 cloves of garlic, grated

1/2 cup parsley, chopped

1 tbsp tomato paste

1/2 tsp garlic powder

1/2 tsp paprika

1/2 tsp cumin

1/2 tsp turmeric

1/4 tsp oregano

1/2 tbsp olive oil

Juice of 1/2 lemon

Directions

  1. In a mixing bowl, combine all ingredients and mix thoroughly with hands or spatula.

  2. On a baking sheet, shape the meat mixture into a square to fit your wrap of choice (roughly 9x9 should fit most)

  3. Refrigerate shaped mixture for at least one hour to set.

  4. Preheat oven to 425F.

  5. With a knife or rubber spatula, split the square into 4 individual keftas with at least an inch between each.

  6. Bake keftas for 8-10 minutes, then finish on broil for another 3-5 minutes until golden brown.

  7. Serve in a wrap or tortilla with condiments of choice.

Notes

Great with quick pickles, lettuce, tomato, and/or onion.
