Parmesan Chickpea Crisps

1 can chickpeas, drained and rinsed
2 tsp olive oil
1½ tbsp everything bagel seasoning
85g (¾ cup) parmesan, finely grated
Salt and pepper, to taste
Directions
Preheat oven to 400°F.
Dry chickpeas thoroughly with a kitchen towel and let sit uncovered for 30 minutes if possible.
Toss with olive oil, salt, and pepper, then spread on a parchment-lined baking sheet.
Roast for 25 minutes, shaking halfway through, until golden.
Crowd chickpeas into the centre of the pan and top evenly with parmesan and everything bagel seasoning.
Bake another 8–10 minutes until cheese is melted and deeply golden.
Cool completely before breaking into clusters.
