Chocolate Banana Fudge Cake

Recipe

Comebine the following dry ingredients:

240 g all purpose flour

2 tsp baking powder

1/2 tsp baking soda

Optional: 1 tsp cinnamon and 1 tsp Cardamom

2 eggs 🥚🥚

150 g semi melted butter

120 g white sugar

80 g brown sugar

2-3 mashed ripen bananas (around 180 g)

130 g creme fraishe

Directions

Preheat the oven to 185°C (fan oven).

Whisk butter and sugar together with an electric mixer before adding in the eggs. Whisk again for 2 minutes on high speed till fluffy.

3.Fold in the mashed bananas, then the dry ingredients. Add the creme fraishe.

Pour the batter into a loaf pan.

Bake for 40-45 minutes (check if it’s done with a toothpick).

Let it cool down completely before adding the delicious chocolate fudge frosting!

Chocolate frosting.

200 g creamcheese

125 g butter

100 g melted chocolate

40 g dark cocoa powder

140 g icing sugar (adjust to for a sweeter taste)

Everything should be at room temp.

Cream the butter and icing sugar on high speed for 3-4 minutes before adding in the creamcheese followed by the melted chocolate and the dry ingredients.

Whisk everything together on medium speed for a creamy texture.

Add it on top of the cooled-down banana cake and decorate with a few berries & banana slices!
